Posted: November 9th, 2008 | Author: admin | Filed under: Uncategorized | No Comments »Onions cooking in butter and chopped fresh rosemary, which go together (with a lot of other not-so-healthy ingredients) in Creamy Herbed Potatoes, from Pioneer Woman’s cooking blog. I made the mistake of trying to “lighten them up” a little bit – this is a relative term; I used skim milk instead of whole and low-fat cream cheese because it was all I had around the house – which did not go well. Apparently, the trick to making these creamy and delicious is in the sheer volume of animal fat.
That said, uh, they were delicious. Enough that I’d consider making the full, arterial-spasm-inducing version, just to see what they taste like. Because as is? I’m not going to lie, they were still pretty tasty.
