I’ve been sick for the better part of this week, and I finally ran out of backlogged posts to upload.
This is one of my favourite pasta recipes to make, mostly because it’s just as good day-old and room temperature as it is fresh. When you get right down to it, all there is to this recipe are some roasted vegetables and pasta tossed in oil and vinegar, which technically makes it a salad, I think, but whatever. It’s delicious, and reasonably healthy, and the leftovers don’t taste like leftovers.
