The most half-assed, non-breakfasty weekend breakfast ever: cheese, crackers, and an apple. Posted on the internet because traveling across the country for the Thanksgiving long weekend has made me sleepy, and I don’t really feel like writing up a longer post. Also, it was delicious.

One of my favourite things to make when I’m feeling lazy and need to get some work done: Stuff I Found In My Fridge Nachos!

They are pretty self-explanatory, but for the record, this iteration included:

Two crunched-up taco shells,
leftover refried beans,
half a tomato,
chopped onion,
pickled jalapenos,
lettuce, and
parmesan cheese.

The trick, really, is to bake it in two rounds: once with the onions and chips and everything else that’ll take a bit of time to cook, and then a second round with the stuff that shouldn’t cook too long, like the tomatoes and cheese.
