One thing I forgot to mention about the first batch of chocolate-espresso cookies was that they were for a charity function, so I didn’t actually get to eat that many of them. Over the weekend, I cooked up a second batch – these ones were all baked in muffin tins, and they are much prettier than their cookie-sheet cousins. Also, did you know that 24 cookies makes a perfect circular pyramid? (I know, math geeks, a circular pyramid is a cone, shut up.) Now you do.

My favourite cheese, like, ever. It’s a raw sheep’s milk cheese called Etorki, and I love it more than possibly any other cheese I’ve tasted. (I am a bit of a cheese snob – I spent a horrible summer working in a grocery store deli, which gave me an appreciation for the fact that there are so many cool kinds of cheese besides “cheddar” and “mozarella,” and it sort of went downhill from there.)

I finally swallowed my cheapness and bought a hundred grams from the ridiculously fancypants grocery store down the way, and my god, it was so worth it. Nom.

Mmmmmm. This is how I like my cakes: easy, adorable, and so, so tasty. These are made from the recipe in Bakerella’s post souffle the “easy” way. They are not, as she points, out, technically souffles – they use whole eggs and baking powder to rise, real souffles use egg whites and witchcraft to rise – but they are basically good enough for me right now. Because these cakes? So, so good.

I tried this recipe two ways: once in the cutesy little ramekins, like above, and once in muffin tins. This was 99% born of laziness, as I had a craving for chocolate at 7:30 PM and only own four ramekins. Surprisingly, the cupcake-souffles turned out just fine! I had to keep a pretty close eye on the baking times (the cupcakes came out after 30 minutes, the ramekins after 45 minutes), and admittedly the ones in the ramekins look a lot prettier if I was serving them for a dinner party or something, but dudes. Dudes. These are delicious. I am actually eating one as I type this, and I am having trouble articulating how delicious without just overusing the words “moist” and “chocolate” until they lose all meaning.
